standout Chalonnaise Crémant
about Frédéric Gueugneau took over the Gouffier estate in 2011 after the death of Jérôme Gouffier, whom he had previously worked under as well as at the Chablis co-operative, La Chablisienne. The estate, located between Mercurey and Rully, is 200 years old, with a domed cellar which was a bunker in Napoleonic times. Frédéric has maintained the traditions of the property, but has also brought it into the twentieth century to make Gouffier an exciting contemporary producer.

Crémant de Bourgogne Extra Brut (vintage) ($33)
60% Pinot Noir, 40% Chardonnay. A fine, elegant, high-acid, gently leesy wine, proof that Crémant de Bourgogne is improving.
