standout high-elevation plantings of Parellada and Paraje Calificado
about wine has been made on “La Freixenada” for 400 years, and is now owned by the eighteenth generation after formally leaving the Freixenet books in 2018. The property is in the village of Sant Quinti de Mediona, high up in Penedès with plantings as high as 750m. This is where Parellada shines, but Xarel·lo, Macabeo, Pinot Noir, and even Cabernet Sauvignon are planted. There are two lines: single-vineyard Can Sala and La Freixeneda.

Can Sala Cava de Paraje Calificado Brut Nature 2008 (€60)
50% Xarel·lo, 50% Parellada. Twelve years on the lees, no dosage. From the Can Sala Paraje in the heart of the village. One of the finest of all Cavas. Despite the long lees ageing, this wine retains its fresh vibrancy with ripe white peach aromas. There’s a briny salinity akin to a fino. Unsuprisingly, lots of lees aromas: sourdough, toast, bread, sweet spices, as well as tertiary aromas of earth, mushroom, roasted almonds. Stunning.
