standout range of classic, aged Cavas
about the winery started making Cava in 1882 and has made nothing but sparkling wine since then. An impressive winery built by modernista architect Ignaci Mas i Morell at the beginning of the twentieth century has cellars 30 metres underground where the wines naturally age. Now owned by Rioja producer CUNE, the range is very solid with the wines receiving extended lees ageing.

40% Xarel·lo, 30% Macabeo, 30% Parellada. 30 months on the lees. 2g/l dosage. Subdued aromas of stone fruit, bruised apple, and mushroom, retaining fresh acidity.
Organic Brut Reserva 2018 ($25)
50% Macabeu, 35% Xarel·lo, 15% Parellada. 18 months lees ageing, 8g/l dosage. Smoky, nutty, toasty, floral, with aromas of sweet spice and cooking apples, and crisp acidity.
“Josep Valls” Extra Brut Gran Reserva 2018 ($18)
An unusual blend of 35% Xarel·lo, 35% Chardonnay, 15% Macabeo, 15% Parellada. 40 months lees ageing, 4g/l dosage. Creamy and rich, soft peach aromas, and developing dried fruit, mushroom aromas.
