about in the First World War, Henri Hervieux fought in Champagne and met Juliette Dumez, from a family of growers. They married in 1920, the start of the winery. The domaine was advanced by André et Simone Hervieux in the 1950s and then two brothers, Bruno and Laurent, in the 1980s. 9.5 hectares owned, winery based in Sacy. Powerful, brioche-led style. 60,000 bottles produced (5,000 cases).

“Hilde” Rosé NV ($45)
50% Pinot Noir, 25% Meunier, 10% Chardonnay + 15% red wine. 9g/l dosage gives the wine a rich creaminess, with fruity strawberry, raspberry aromas.
Special Club Brut 2014 ($85)
50% Chardonnay, 30% Pinot Noir, 20% Meunier. 7g/l dosage. Rich, spicy, with green and red apple aromas, concentrated and serious.
