about twin brothers Pierre (the shy one) and Phillipe (the garrulous one) Aubry are the family members continuing a Champagne tradition dating back to the 1790s, together with brother-in-law Noël Poret. They're one of the region's more experimental producers, as they work with not just Chardonnay and Pinot Noir but historic varieties such as Petit Meslier, Arbane, and Pinot Gris—varieties many other producers have long forgotten about.

Premier Cru Brut NV ($55)

35% Chardonnay, 30% Meunier, 30% Pinot Noir, 5% Arbane, Petit Meslier, and Fromonteau. After phylloxera and the First World War, most Champagne producers settled on three varieties: Pinot Noir, Chardonnay, and Meunier. They form the core of this wine, but there are three others which used to be more commonly planted: Arbane, Petit Meslier, and Fromonteau (the local name for Pinot Gris). To further the commitment to tradition, many of the vines are planted en foule: crowded, high-density plantings common in the nineteenth century. Elegant, lean, fresh, floral, with a barley-like character.
