about Durdon-Bouval is a fourth-generation family producer, and winemakers Sandie and Ludovic have been joined by their son Antoine to move into the fifth generation. They're based in the Premier Cru village of Vincelles, and have expanded to nearby Barzy-sur-Marne for a total of 6ha of plantings. Since 2010, they have farmed organically—difficult in Champagne's cool, damp climate, which shows how committed they are to preserving the integrity of the land.

Extra Brut Rosé NV ($49)

A Meunier based blend from 40-year-old vines, the pink color comes from added red wine as is traditional in Champagne. It's aged on the lees for two years before a dosage of 6g/L after disgorgement, although the high, lean acidity the sugar is barely noticeable.
