about You may know of the Gruet winery in New Mexico which makes affordable, good-quality sparkling wine. It was founded by Champagne producer Gilbert Gruet in 1987. After successfully establishing the property, he returned to Champagne to continue developing his family winery, changing the name to Paul Laurent, a tribute to two close family members. His grandchildren are now taking over the running of the winery, continuing Gilbert's legacy.

“Cuvée du Fondateur” Brut NV ($40)
The base wine is fermented in stainless steel. Once in the bottle, it is aged for 21 months in the bottle on the lees. It's a blend of mostly Pinot Noir, which provides structure and fruitiness, and Chardonnay, which gives the wine a vibrant acidic profile.
