about Nyetimber is a property listed in the Doomsday book, bought by two Americans from Chicago in the 1990s determined to make quality sparkling wine in the south of England. In 2008, the 2003 won best sparkling wine in the world, launching the reputation of English bubbles on to an unsuspecting world. The property was bought by Dutchman Eric Heerema, recruiting winemakers Cherie Spriggs and Brad Geatrix to maintain quality. However, the wines have steadily got more expensive.

Classic Cuvée NV ($60)

c. 60% Chardonnay + Pinot Noir and Meunier. Standard bearer for English sparkling wine. Three years on the lees. Dosage of 8-10g/l adds richness and body to the lean, acid structure. Pleasing combination of citrus, baked apple, toast, spice aromas.

Tillington Single Vineyard 2009 ($110)

c.80% Pinot Noir + Chardonnay. This is a lean, serious, acid-driven, intense wine showing what England is capable of. Arguably the best English sparkling wine, but also one of the most expensive.
