“Cuvée Spéciale” 2018 ($35)

Xinomavro is a tannic black grape variety, so it may seem perverse to make sparkling wine from it. But making the wine using the traditional method with gentle pressing means that no colour or tannin are extracted. It's aged on the lees for twelve months for a light yeasty quality. Due to the warm climate, it's fruitier than champagne but maintains the naturally high acidity of Xinomavro.
