standout exciting Portuguese producer not afraid to experiment
about Filipa Pato is the daughter of Luis Pato, a producer who revived the Baga variety in Bairrada: she is also a champion of the tricky Baga variety. Like her father, she is not afraid to innovate nor to be independent and do her own thing. Her sparkling wines are fun and approachable, but not simple, and like her labels quite stylish. The winery’s name now incorporates her husband William Wouters from Antwerp, a sommelier and chef.

70% Bical, 23% Maria Gomes, 7% Cercial. 9 months on the lees. An easy, approachable sparkling: not quite as fun as the rosé.
3B Rosé NV ($20)
86% Baga, 14% Bical. Nine months lees ageing. Red fruit, floral aromas; not complex but very drinkable as an aperitif.
