about Domaine Achard-Vincent is a small sixth-generation producer run by Jean-Pierre and his son Thomas. One of the first wineries in France to practise sustainable, eco-friendly viticulture, the winery has been certified organic since 1982 and biodynamic since 2005. Despite the region of Die not being internationally well-known, they make nine different sparkling wines from both Muscat and Clairette.

Clairette de Die Brut NV ($24)

Made solely from Clairette using the traditional method: a first fermentation followed by a second in the bottle, with ageing on the lees once fermentation is complete. Although the wine tastes dry, there is a dosage of 9g/L to balance the naturally high acidity. Alcohol is 11%.

“Tradition” ($27; not tried) is 90% Muscat, 10% Clairette, and is bottled at 60g/l sugar and 6% ABV.
