about Benoît Doussot’s facilities are located between Burgundy and Champagne, and the winery is promoted as “un négoce d’instinct bourguignon et de conviction champenoise.” I’m not sure what that means exactly beyond a catchy marketing line, but all fruit sourced is farmed organically or biodynamically, all from Côte des Bars, designed to express this sometimes overlooked region.

“Les Semblages” (Boréal) 2019 (€55)

From north-facing slopes on Kimmeridgian soils at 200m elevation. All Pinot Noir. Vinified and matured in oak barrels before bottling, and 24 months ageing. Rich but very fresh style that isn’t afraid to express the Pinot Noir character of the wine.
