Run by Michel Drappier, Pinot Noir is the main grape variety, although historic Champagne varieties Fromenteau, Arbane, Petit Meslier, and Blanc Vrai (Pinot Blanc) are also planted. Wines feature low dosage and use of sulphur.

Brut Nature NV (€44)

100% Pinot Noir, with no dosage and less than 35mg/L of sulphur. 36 months on the lees. The absence of sugar gives the wine a crisp, zippy mouthfeel, balancing the fruity Pinot Noir body.

Rosé de Saignée NV ($80)

100% Pinot Noir, small dosage of 4-5g/l. 30 months on the lees. Classy, high-end rosé, orange in colour, with concentrated aromas of red fruits, earth, mushroom, cinnamon, and smoke, with a chewy, acidic texture.
