about Edouard Lepesme used to work for négociants in Burgundy and Champagne, before deciding to dive into making wine himself. After working at wineries in France and abroad, in 2014 he bought 14ha of land around the village of Vaux-Auxerre (not far from Chablis) to establish himself in an overlooked region. His philosophy is a hands-off approach, with native yeasts, low sulphur, and no new oak. He's quickly gained a reputation for pushing the quality up in a previously neglected area.

“Les collines de Vaux” Crémant de Bourgogne NV ($30)

50/50 Pinot Noir/Chardonnay. This wine is zero dosage, allowing the racy acidity to really drive the structure of the wine. Mostly vintage-based, it's aged for at least two years on the lees. Edouard is based in the village of Vaux-Auxerre, hence the wine's name which means "the hills of Vaux."
