standout widely-available, versatile Limoux producer
about begun in the 1980s by Michel Dervin from Champagne, and modernised in 2002 by Jacques Chavel and cellarmaster Henri Albrus. Nine different sparkling wines are made, mostly Crémant but also the historical Blanquette de Limoux. The overall style is approachable and affordable, if not especially complex.

Crémant de Limoux Brut NV ($15)
60% Chardonnay, 30% Chenin, 5% Mauzac, 5% Pinot Noir. Simple but very affordable and drinkable Crémant, on the fruitier side but very fresh. Also labelled “Les Graimenous” in France.
“Le Moulin” Blanquette de Limoux Brut NV (€11)
90% Mauzac, 10% Chardonnay. 21 months on the lees. Méthode ancestrale, but dry and very clean. Fruity green apple, green pear aromas, with a warm mouthfeel. Not overly complex. Also available in a sweeter version.
