about based in the village of Celles‐sur‐Ource in Côte des Bars, with 14 hectares of plantings, mostly of Pinot Noir and a little Chardonnay and Pinot Blanc. Jean’s grandfather Pierre was the first to make champagne, and his father Raymond started making it commercially in 1952. The wines are all single-varietal Blanc de Blancs or Blanc de Noirs. There are vintages going back forty years which can be bottled to order.

Floral, lean, high acid, quite rich—indicating its Côte des Bars origin. 100% Chardonnay. Three years on the lees. 6g/l dosage adding to richer style, but balanced by acidity.
