Jean Vesselle is very much associated with Pinot Noir, for a fruity style with a relatively high level of dosage. The wines are rooted in tradition, and both the sparkling and still wines give a great introduction to the varied history of Champagne. Jean Vesselle himself, part of the Bouzy Vesselle family, took over in 1971; now his grandson David is in charge, since 2014. Brut Réserve NV ($50)

80% Pinot Noir, 20% Chardonnay, two to three years ageing. Dosage is 10-11g/l: noticeable but integrated. An introduction to the slightly sweet, fruity, very fresh style of the producer.

Préstige Brut Grand Cru (vintage) ($110)

70% Pinot Noir, 30% Chardonnay, all from Bouzy. Four years ageing, with 9-10g/l dosage—the sugar adds weight and complements the red fruits of the Pinot. A classic example of Pinot-based champagne.

Oeil de Perdrix NV ($60)

Named after the traditional name for a champagne with an onion-skin colour from skin contact. 100% Pinot Noir. Two to three years ageing, 5-7g/l dosage. Think of this as a mature rosé and a beautiful ode to Champagne’s past.
