about definitely a producer who focuses on the traditional aspect of farming: the horses feature prominently on the website; certified biodynamic. The vines are mostly (7.3ha) from Ambonnay with a little (0.7ha) from Bouzy. Considering the small amount of land owned, the range of wines is somewhat overwhelming: 20 champagnes, plus another four still wines, all different blends of the Champagne varieties.

“Yuman” Premier Cru 2019 ($68)
100% Chardonnay, bottled in June 2020, and disgorged in June 2022. No dosage, minimal sulphites (16mg/L). Comes from two Premier Cru villages, Villeneuve Renneville et Villers Marmery. Considering this is a Blanc de Blancs, an incredibly rich style, like a creamy, toasted, sweet brioche.
