about Pascal Doquet took over his family estate, Doquet-Jeanmaire, in 1995, where he had worked since 1982, establishing his own domaine in 2004 (his sister took some of the other family parcels). The focus has always been sustainable farming—the original winery was one of the first to be members of the lutte raisonnée organisation in the 1980s. 9ha of old vines in Côte des Blancs are owned, including the villages of Vertus, Le Mont Aimé, and Le Mesnil-sur-Oger. Certified organic since 2010.

“Arpège” Extra Brut NV ($89)

100% Chardonnay from the three villages of Vertus, Mont Aimé, Villeneuve. Base wines see six months lees ageing with minimal stirring, a third of it in oak barrels. Current release is 66% 2019, the rest reserve wines, with a minimum three years lees bottle ageing. Very dry with high acid, and a linear, grainy texture filled out with sweet spice, lees aromas.
