standout classic Côte des Blancs (and Sézannais)

about Yves Pertois and Janine Moriset were a couple who were the children of Côte de Blancs winemakers. They created their own label in 1951; now it is run by their granddaughter Cécile and her husband Vincent. They own around 20ha of land, mostly in Côte de Blancs (all Chardonnay) but also in Sézannais (60% Pinot Noir, 40% Chardonnay). In 2009, they introduced a new, innovative pressing center to make grape-handling and winemaking as sensitive as possible.

“L’assemblage” NV ($54)

This elegant, lean champagne comes from the producer’s plantings in Sézannais where their Pinot Noir holdings are based. It’s vintage based, with 20-30% coming from the perpetual reserve (a type of solera system in which the barrels are topped up each year). Ageing of at least 15 months gives a light lees texture. Dosage is just 1g/l—this is a dry, high-acid style of champagne.
