Like the alternative still wines, the pét-nat comes from fruit within their Tavel holdings but does not come under the appellation rules. “Valet” is both an acronym of Tavel and the French for “jack” in a pack of cards.

Clairette/Bourboulenc. Very fresh, crisp, drinkable, and clean pét-nat, with a little bit of sugar to add a round mouthfeel.
