standout biodynamic grower-producer specialising in Blanc de Blancs
about founded in 1989 and still family run, Waris-Larmandier were certified biodynamic in 2020 after Jean-Philippe took over vineyard management in 2011. 9ha owned in Chouilly, Cramant, Avize, Oger, and Le Mesnil-sur-Oger. Known for Chardonnay, but also farming small plots in Montagne de Reims and Côte des Bars. Very serious, high-quality wines.

Racines des Trois ($70)
60% Chardonnay, 30% Pinot Noir, 10% Meunier. From ten different villages in three regions: Côte des Blancs (for the Chardonnay), Montagne de Reims (for the Pinot Noir), and Côte des Bar (for the Meunier). Non-vintage but based on 2017, backed up by a solera system with wines from 2013-2016. Up to two years lees ageing. Dosage of 5.5g/l. A wine with depth, acidity, and lees-based complexity, very expressive of the whole Champagne region.
Particules Crayeuses ($80)
100% Chardonnay, up to three years lees ageing with 4g/l dosage. Based on the 2016 vintage, with reserve wines from a solera system. All from Grand Cru sites in Côte des Blancs. Refined, linear, powerful.
