Asolo Prosecco Superiore Extra Brut NV ($22)

A rare example of a dry prosecco (4g/L), which is fresh, fruity, floral, and very attractive. Second fermentation takes 60 days, and then the wine is rested for seven months. This is what prosecco should taste like.
