about The Pozzobon family has a long grape-growing history, but it was only in the 1970s that Emilio Pozzobon began to concentrate on winemaking. The winery is now run by his three sons, Diego, Adelino, and Mirco, with the next generation almost ready to get involved. Since 2012, all production has been certified organic (a process that began in the 1980s), with a focus on specific vineyards rather than buying generic grapes from small growers.

Asolo Prosecco DOCG NV ($21)

One of the best examples of Prosecco: at 7g/L residual sugar not too sweet, expressing the quality of the fruit.

Col Fondo Asolo Prosecco DOCG NV ($25)

After 18 hours' skin contact, there is a first fermentation for a low-alcohol wine, before second fermentation in bottle. There is no disgorgement and there might be some sediment in the bottle (col fondo means "sediment at the bottom"): the winery recommends turning the bottle up and down a couple of times before opening.
