standout sparkling Soave
about the Gini family has been making wine in the Soave village of Monteforte since the 1500s; the current generation is Sandro and Claudio, sons of Olinto who oversaw a transition to organic, non-interventionist, progressive winemaking in the 1980s. The Gini family is dedicated to a hands-off approach, allowing the quality of the grapes to express themselves in the wine which counts as some of the best whites of Italy—as well as a rare sparkling version of Soave.

“Camillo” Brut Millesimato ($50)
Soave is known for its dry white wines, so this sparkling wine is most unusual. Because of the style and the blend of grapes, it cannot be labelled Soave but nevertheless this is a perfect representation of the elegant, high acid wines that come from high-elevation plantings in the area. The wine is aged for six years in the bottle on the lees in cellars hewn from volcanic rock, with the acidic structure to preserve its freshness.
