standout taking prosecco back to its past

about Eros Zanon makes sparkling wine with either méthode ancéstral or pét-nat: the ambition is to create wines purely expressive of place, very different from most commercial prosecco. He does not focus exclusively on Glera: wine is also made from a local variety called Boschera. The wines are definitely differently from commercial prosecco, yet more indicative of historical prosecco. It’s great to see producers embracing the history of prosecco, rather than making high-volume wines.

Boschera Pét-Nat ($32)

Boschera is Verdicchio, but there are only seven hectares planted under the Boschera name, so this is a fascinating and unique wine to try. It’s pét-nat: you’re really tasting the grape variety, but also the acumen of the winemaker. That also makes it very different from most prosescco, although still fruity and aromatic. A great way of experiencing prosecco that completely re-interprets the history of the region. Two days skin contact before fermentation, three years on the lees.
