about Pauline Mourrain, originally from Brittany, and Laurent Troubat, from Savoie in the French Alps, met while studying engineering in Strasbourg. After working for a year as engineers, they quickly decided they needed a change and so they were “woofing” in Australia—which is the base of the winery’s name. On their return, Paulie studied oenology in Burgundy and after graduating the couple had a connection to lease vines in Saumur and are now producing exciting, imaginative wines from the region.

“Jolie Brise” NV Vin de France ($25)

Jolie Brise means “pretty breeze,” which sums up the light, bright, fun style of the wine. It’s a blend of Cabernet Franc and Chenin Blanc, from vines which are harder to ripen in the cool climate, resulting in a light, high-acid sparkling rosé. Although the wine is labelled non-vintage, the bottle from this tasting is in effect from 2019.
