Ribolla Gialla Brut NV ($20)

aged for a very short period on the lees (120 days) but made using the traditional method, this is a fresh, approachable sparkling wine. It comes from vineyards planted near the sea at an elevation of 30m. The neutral aromas and naturally high acidity of Ribolla Gialla make it well-suited for lean, elegant bubbles. Dosage is 8g/l, the sugar filling out the high-acid palate, with minimal sulfur added.
